About This Whisky

Sullivans Cove Double Cask Batch Nº DC123 is a Tasmanian single malt composed from around ten casks matured in a combination of American and French oak. Bringing together whiskies aged from 6 to 18 years, the batch was assembled by taste to balance crisp orchard fruit, warm confectionery notes, caramel and gentle oak. Decanted on 24 July 2025, DC123 yielded 1,360 bottles at 47.7% ABV.

Tasting Notes

Nose: A very fruity first approach: crisp apple, sliced pear and green grapes, lifted by something earthier underneath—freshly dug carrot, wet rainforest and the scent of petrichor. A touch of rose and frangipani softens the edges.

Palate: Creamy and full-bodied, the fruit arriving fresh then turning to confection: apricot leading into maple syrup, white chocolate and vanilla sponge. Chamomile carries the apple-floral note through, while a light touch of oak gives broad, gentle structure for it all to play against.

Finish: Long and generous, moving into sweeter territory of pineapple jelly, passionfruit and pink musk, giving way to white marshmallow, salted caramel and soft fondant. Buttery pastry lingers at the very end.
