Serrat Shiraz Viognier 2025 is a Yarra Valley red wine from Victoria, Australia, combining Shiraz from the 2003 block with Viognier from the original 2001 plantings.
The wine continues Serrat's run of expressive, concentrated Shiraz Viognier, built around dark fruit, violet fragrance, spice and finely persistent tannins.
Vintage & Winemaking
The 2025 season was mild in spring, with good rainfall and soil moisture leading into one of the calmest flowering periods of recent years. Summer was warm, fine and exceptionally long, with no extreme heat and ideal ripening conditions.
The Shiraz block includes Best's Old Block, sourced from the original plantings at Best's Great Western planted in 1868, and clone 1654, a Barossa selection. The Viognier comes from Yarra Yering cuttings that Tom Carson personally cut in 2000.
Halliday notes 5% whole bunches, co-fermentation with 5% Viognier and maturation in 500L French oak, 25% new.

Dark cherry, blackcurrant pastilles, violets, white pepper, black and darker red fruits, floral lift and complex spice.
Palate
Voluptuous without heaviness, with concentrated fruit intensity, silky tannins and layered spice.
Finish
Long and balanced, with fine-grained, exceptionally persistent tannins.
Food Pairing
Suggested pairings include beef and venison, dim sum with meat, pork with garlic sauce, lamb couscous and Tablas de Monterrey.
