Vintage & Winemaking
The 2025 vintage was one of the earliest in Maison Saint Aix's history, with harvest beginning on 27 August and finishing on 25 September. Warm conditions and careful vineyard work produced healthy fruit with strong balance and clarity.
For 2025, the estate introduced a renovated chilling system, allowing juices to be cold-settled at 0°C before fermentation. Each variety was vinified separately before blending to preserve precision, finesse and texture.
