Overview

The 2025 Dixon Pinot Noir draws on some of Bindi’s earliest Pinot Noir vines, combining fruit from part of the original 1988 planting with the 2001 Kaye vineyard. Bottled earlier than Bindi’s other five Pinot Noirs, Dixon offers an immediately harmonious expression of red and dark cherries, plums, lifted florals and earthy complexity, underpinned by bright energy and fine, chalky tannins.

Vineyard

The fruit comes from part of Bindi’s original Pinot Noir planting established in 1988 and the Kaye vineyard planted in 2001. Bindi’s vineyards are situated in the cool Macedon Ranges at approximately 500 metres elevation, with predominantly infertile soils of shattered quartz over siltstone, sandstone and clay.

Winemaking

The fruit was destemmed and fermented with wild yeast in open fermenters. The wine was matured for 10 months in small French oak barrels, approximately 20% new in 2025, before being bottled earlier than Bindi’s other five Pinot Noir wines, which typically receive 15 months maturation.

Producer Tasting Notes

Bindi Winegrowers: “There is a seductive interplay between red and dark cherries and red and dark plums in this delicious and age worthy wine. On opening there are earth, ginger and roses lifting and with air the nose gains a racy red berry lift. Already it is smooth and harmonious. There is bright energy through the palate with gently grippy, chalky tannins carrying the fruit through a beautifully balanced, long finish.”

Producer

Bindi is a family wine producer in Victoria’s cool Macedon Ranges. Bill and Michael Dhillon established the vineyard in 1988 on the family property near Gisborne, with a focus on Pinot Noir and Chardonnay. The vineyards are managed with a hands-on philosophy encompassing hand pruning, intensive canopy management and hand harvesting. Since 2005, Bindi has implemented organic procedures and inputs focused on promoting soil life, balance and vine health.

Michael Dhillon worked as assistant winemaker to Stuart Anderson from 1991 until assuming full responsibility in 1998. His experience includes vintages in Champagne, Crozes-Hermitage and Tuscany, complemented by extensive study of Burgundy.
