2025 Ashton Hills Reserve Pinot Noir 750ml

The 2025 Ashton Hills Reserve Pinot Noir 750ml is a refined Adelaide Hills Pinot Noir from the Ashton Hills estate. Made from the estate’s six preferred Pinot Noir clones, this Reserve release is assembled from the finest barrels to express depth, structure and site-driven complexity.

The fruit is gently de-stemmed to retain as many whole berries as possible, with a proportion of whole bunches used according to the vintage. Following fermentation, the wine is basket pressed into a combination of old and new French oak barriques before the final barrel selection.

The 2025 season was one of the earliest on record in the Adelaide Hills. A warm finish to winter encouraged early budburst, while continuing warm, dry conditions brought the fruit to ripeness in late February rather than the usual early-April window.

The bouquet shows dark fruit, earthy wood spice, beetroot and sarsaparilla, with black olive, pastille, beef-stock and herb notes adding savoury detail. The palate is tightly coiled and structured, layering dense dark fruit with coal-dust and black-tea characters over a lively acid line.

Power and finesse are held in balance, giving this Reserve Pinot Noir the structure to evolve gracefully in bottle. Enjoy now with decanting, or cellar for up to 10 years for further complexity.
