Winemaking
The 2024 The Standish Shiraz was sourced from the renowned Laycock Family Vineyard in Greenock, home to own-rooted Shiraz vines planted on ironstone gravel and schist soils. The wine was fermented using wild yeast with 50% whole bunches, increasing complexity, aromatic lift and structural detail.
Dan Standish's low-intervention approach allows the vineyard character to remain at the forefront, while careful maturation preserves purity, texture and balance. The wine is sealed under natural cork to support long-term ageing.
