Vineyard and Winemaking
Grown at high elevation in the granitic foothills of Beechworth, the Savaterre vineyard benefits from long, cool ripening conditions that yield fruit of exceptional concentration and natural acidity. Handpicked grapes were fermented with indigenous yeasts, including a proportion of whole bunches to enhance aromatic lift and structural nuance. Gentle extraction preserved finesse, while maturation in fine French oak barriques over 18 months contributed layers of complexity without overwhelming the fruit.
