The Applejack Vineyard, planted in 1997 at an altitude of around 300 metres, benefits from red volcanic basalt soils and cool mountain air that extend ripening and preserve natural acidity. Hand-harvested fruit was whole-bunch pressed and fermented using indigenous yeasts in French oak puncheons, with minimal new oak to maintain precision and transparency. Partial malolactic fermentation and extended lees contact built texture while retaining vibrancy.
