Overview
Yalumba The Signature is one of the Barossa's enduring Cabernet Sauvignon and Shiraz blends, created from carefully selected vineyards across the Barossa Valley. The 2023 vintage combines 55% Cabernet Sauvignon with 45% Shiraz, bringing together Cabernet's lifted aromatics and structure with the richness, depth and generosity of Barossa Shiraz.
Each vintage of The Signature honours an individual who has made a significant contribution to Yalumba's culture and traditions. The 2023 vintage is dedicated to Peter Sawrey, Yalumba's retired Trade Marketing Manager, who wrote 32 The Signature back labels, with his own 2023 vintage being the last.
Vintage
Above-average winter and spring rainfall and cool, wet conditions delayed budburst by three to four weeks. Mild conditions continued through the season, allowing the grapes to ripen slowly while retaining pristine flavours and beautiful natural acidity.
Vineyard
The Cabernet Sauvignon was sourced from three Barossa Valley vineyards selected for their lifted aromatics and structural character. The Shiraz came from three vineyards of varying ages, including vines planted in 1935, contributing sweetness, fullness, depth and layers of complexity.
Winemaking
The fruit was fermented in open-top stainless steel fermenters using wild fermentation, with an average of nine days on skins. The wine was matured for 19 months in French and Hungarian oak, including 22% new hogsheads and barriques, with the balance matured in older French and Hungarian oak.
Producer Tasting Notes
āStunning scarlet red in colour with a vibrant crimson hue. Aromas are classic, detailed and complex, featuring prominent notes of blackcurrant, dark chocolate, black cherry and olive tapenade. As the wine opens alluring floral nuances, sage and liquorice emerge. On the palate the wine is beautifully structured, revealing layers of coffee, blue fruits and spice with long, flowing tannins. This Signature is both stylish and elegant.ā
