Vincent Dancer Bourgogne Blanc is a Chardonnay from one of Burgundy's highly regarded small producers. Dancer's approach emphasises early picking, low extraction and minimal intervention, producing wines noted for focus and precision.

Winemaking

Vinification takes place in used 456L barrels without temperature control or pumping over. Dancer's winemaking approach incorporates natural primary and malolactic fermentations, neutral vessels for ageing and very low sulphur additions.

Producer

Domaine Vincent Dancer is a small Burgundian producer based in Chassagne-Montrachet in the Côte de Beaune. Dancer began production in 1996 with approximately 4,000 bottles annually, initially selling mainly to négociants, before increasing production to around 20,000 bottles from 2003.

The domaine farms five hectares of vines without herbicides and was the first producer in Chassagne-Montrachet to gain organic certification for its vineyards. Its hands-off philosophy extends to the cellar, where wines are fermented with wild yeasts, traditionally aged in barrel and bottled without fining or filtration.
