Domaine Louis Michel et Fils tends 21 hectares of vineyards, including esteemed Premier and Grand Cru plots. True to authentic Chablis tradition, their wines are unoaked and fermented in stainless steel, ensuring the fresh purity of the fruit is preserved. The wine matures on its lees in tanks for 12 months, gaining intricate bready nuances and a smooth texture. The result is a lively, citrus-driven wine with floral notes, crisp green apple, and a burst of zesty lemon. With a winemaking heritage dating back to the 19th century, the Michel family continues to excel in producing exceptional Chablis from their renowned vineyards.

Legendary and rare, Grenouilles is the smallest of the Chablis Grands Crus. The plot is located at the top of the appellation's slope.

Vineyard notes:Ā 

Kimmeridgian. Medium-depth, clayey, brown soil with small pebbles improving soil drainage.

Southwest exposure, bright, very airy and moderated by the Serein River. Rather gentle slope.

Years of planting: 1950 / 1980

Winemaking notes:

No added yeasts, long fermentation using indigenous yeasts, in temperature-controlled vats.

Spontaneous malolactic fermentation.

Aged for 18 to 20 months. In stainless steel vats only, with minimal handling. Long stabilization in moderate cold.

Bonding with bentonite if necessary.

A single light filtration is carried out at bottling.

Tasting notes:

Serve between 12Ā°C and 14Ā°C. Air before serving.

Grenouilles wines, which must be waited for, are a mixture of power and finesse, always full of surprises.

Spring notes of wildflowers, white-fleshed fruits, and kiwi. The perfect harmony of aromatic complexity and minerality.
