Crafted from Semillon grapes affected by noble rot (Botrytis cinerea), the fruit undergoes natural dehydration in the vineyard, concentrating flavour, sugar, and acidity. Riverina’s warm climate combined with misty mornings creates ideal conditions for the gradual development of premium botrytis, resulting in wines of remarkable purity and complexity.
The 2021 vintage delivered fruit with exceptional intensity and freshness. Selective harvesting ensured only perfectly botrytised berries were used, followed by fermentation and maturation in French oak barrels to build texture, integration, and layered complexity while retaining vibrant acidity.
The wine reveals luxurious aromas of apricot marmalade, honey, candied orange peel, baked peach, and pineapple, layered with notes of crème brûlée, vanilla bean, ginger spice, and toasted almond. The palate is rich and luscious yet beautifully balanced, with vibrant acidity providing lift and precision. Layers of honeyed citrus, stone fruit, and caramelised complexity flow through an exceptionally long and silky finish.
