About the Winery

Daniel-Etienne Defaix owns one of the oldest estates in Chablis, with eight centuries of history at the Vieux Château. The Defaix family has produced wine for four centuries, passing knowledge from father to son. The estate covers 28 hectares planted on Kimmeridgian soils, traditionally farmed to maintain healthy vineyards and high fruit quality.
