The 2015 Noon Winery Reserve Cabernet Sauvignon is a rare and highly collectible release from one of Australia's most respected boutique wineries. Crafted by Drew Noon from exceptional old-vine Cabernet Sauvignon vineyards in Langhorne Creek, this flagship wine represents the pinnacle of the Noon portfolio and showcases the remarkable ageing potential of great Australian Cabernet Sauvignon.

Although Noon Winery is based in McLaren Vale, the Reserve Cabernet Sauvignon has traditionally been sourced from carefully selected Langhorne Creek vineyards, a region renowned for producing Cabernet Sauvignon with exceptional concentration, structure, and longevity. The combination of mature vines, favourable climate, and meticulous vineyard management results in fruit of extraordinary depth and character.

The excellent 2015 vintage provided ideal ripening conditions, delivering fruit with outstanding purity, tannin maturity, and natural balance. Widely regarded as one of the strongest South Australian vintages of the decade, 2015 produced wines combining richness, freshness, and exceptional cellaring potential.

Hand-harvested fruit was carefully sorted and fermented in small batches before maturation in premium French oak. True to the Noon philosophy, the wine prioritises vineyard expression, structure, and balance over excessive extraction or oak influence.

The bouquet reveals intense aromas of cassis, blackcurrant, blackberry, and dark plum, layered with graphite, cedar, tobacco leaf, violets, cigar box, and dark chocolate. The palate is full-bodied and powerful, yet remarkably refined, displaying concentrated dark fruit, fine-grained tannins, vibrant acidity, and exceptional length. As the wine continues to mature, additional layers of savoury complexity and tertiary character are beginning to emerge.
