Overview
Disznoko has been at the forefront of the Tokaji AszĂș renaissance since 1992, producing wines that balance pure fruit, botrytis complexity, richness and freshness. The 2014 AszĂș 5 Puttonyos comes from a challenging, humid vintage in Tokaj in which noble rot developed early and rigorous selection was required. The resulting wine combines substantial sweetness and concentration with notably high acidity and freshness.
Vintage
Following a hot and rainy summer, 2014 proved a complex harvest in Tokaj. High humidity encouraged noble rot across the berries at an early stage, requiring careful selection. Overall production was low, while the proportion suitable for AszĂș was high. The vintage produced refreshing, tonic wines with higher-than-usual acidity and notable palate weight.
Harvest
Intensely botrytised AszĂș berries were selected over three passages. Picking began with ZĂ©ta on 4 September, followed by Furmint from 18 September, with the third selective picking completed on 29 October. Each AszĂș berry was individually picked and stored in stainless steel vats before vinification.
Winemaking
Around 75% of the AszĂș berries were macerated in finished wine for half a day, while the most shrivelled berries were soaked in heavily fermenting must for two days with several pump-overs. After pressing, fermentation took place in stainless steel vats.
The wine was matured for 18 months in 225-litre oak barrels, predominantly barrels from several previous vintages, and was bottled in August 2017.
