“Bright, medium to full yellow colour, the bouquet reductive and smoky/sulfidic, with 'chicken run' sulfide aromas. The palate is dry and savoury, with some astringency. The finish is very dry and long. A savoury wine with some tertiary characters. Full of interest. The palate is seamless. Very good.”

About This Wine
The Triolet blend was first produced at Mount Mary in 1987 and was inspired by the white wines of Graves, Bordeaux.
The vineyard is planted to 75% Sauvignon Blanc, 20% Semillon and 5% Muscadelle.
Each variety is harvested at optimum ripeness and fermented separately. Sauvignon Blanc is picked after the strong herbaceous flavours have disappeared, Semillon when the acid is not too harsh, and Muscadelle when the flavour intensity peaks.
The wine is fermented entirely in barrel, primarily in older barrels. Relatively firm pressing is employed to give the wine texture and lees stirring is carried out to add complexity and body.
The Triolet is typically barrel aged for 11 months by which time the overt fruity flavours have diminished and complex aromas are beginning to develop.
About the Producer
Mount Mary was one of the foremost pioneers of the Yarra Valley after 50 years without viticultural activity. From the outset the estate produced wines noted for finesse and purity.
Founder Dr John Middleton pursued an exacting attention to detail and established a portfolio of four estate wines. His grandson Sam Middleton assumed the role of winemaker in 2011.
