About This Wine

From south-east–facing Kimmeridgian marl soils, the wine is fermented with natural yeast at 18°C for three weeks, followed by full malolactic fermentation. It is then aged on fine lees with monthly stirring for eighteen months to build texture and complexity. Daniel-Etienne Defaix releases his wines for 10-15 years after the vintage, meaning that when many producers are releasing their 2020 wines, he is releasing his 2010 and 2012 wines. This long, undisturbed maturation preserves freshness, purity and depth in the Les Lys Premier Cru.

About the Winery

The Defaix family has cultivated vineyards for four centuries, stewarding 28 hectares including Premier Crus Les Lys, Vaillon and CĂ´te de LĂŠchet, and Grand Crus Blanchot and Grenouilles. Wines are produced without oak and aged on lees for extended periods before being cellared for over 10 years prior to release.
