Overview

Chris Ringland 'Dimchurch' Shiraz is the more archetypal Barossa Shiraz from the Hoffmann Vineyard portfolio. It is described by the producer as the more fruit-forward expression of the Hoffmann/Dimchurch project, sourced from old-vine Shiraz vineyards at Ebenezer in the Northern Barossa Valley.

Vineyard

The Hoffmann Vineyard collaboration sources from old vines situated at Ebenezer in the Northern Barossa Valley. Adrian, a fifth-generation Hoffmann family vigneron, selects individual parcels from his own and neighbouring Shiraz vineyards throughout the growing season.

Winemaking

The grapes are gently destemmed and vinified in small individual batches. After 24 months in oak, a preliminary barrel tasting and classification are conducted, with the process repeated every six months until the blends are finalised and Dimchurch is ready for bottling.

Dimchurch typically undergoes 3–4 years of barrel maturation. The producer recommends decanting the wine for at least six hours to allow its depth to become evident.
