Founded in 1969 by the visionary Dr Bailey Carrodus, Yarra Yering is one of Australia’s most influential wine estates, revered for its classical restraint, aromatic precision, and remarkable ageability. The Dry Red series represents the heart of the estate’s philosophy — elegant, complex, and built for decades of cellaring.

Wine Overview
Dry Red No. 1 is a Cabernet-based Bordeaux-style blend, typically comprising Cabernet Sauvignon, Merlot, Malbec, and Petit Verdot. It is the most structured and intellectual of the Yarra Yering reds — a wine of perfume, tension, and subtle power that evolves gracefully with time.

Vineyard
Fruit is sourced from the original 1969-planted Yarra Yering vineyard in Coldstream. The free-draining, gravelly loam soils and cool Yarra climate combine to produce small berries of intense flavour, fine tannin, and exceptional balance — the foundation of the wine’s long life.

Winemaking
Each variety was harvested and vinified separately in traditional small open fermenters with hand plunging. Maturation took place in fine French oak barriques (around 40% new) for 18 months before blending and bottling without fining or filtration.

Vintage
2007 was a warm, dry, and low-yielding season in the Yarra Valley. The small berries produced wines of concentration and supple tannins, resulting in generous, deeply flavoured reds that have aged beautifully.

Tasting Notes
The 2007 Dry Red No. 1 opens with classic aromas of cassis, cedar, and bay leaf, layered with graphite, dark chocolate, and tobacco. The palate is medium-bodied yet powerful — ripe black fruits balanced by fine, chalky tannins and bright acidity. Now fully integrated, it shows the seamless harmony of mature Yarra Yering: savoury, elegant, and endlessly persistent.
