Vintage & Winemaking
The 2007 growing season delivered healthy, evenly ripened fruit with excellent flavour concentration and natural acidity. Farmed using certified biodynamic principles, the Georgia's Paddock vineyard produced low yields of intensely flavoured Shiraz, allowing the site's distinctive mineral character and vineyard expression to shine through. At release, the wine displayed abundant ripe red fruit, liquorice and mint, supported by powerful tannins and exceptional ageing potential.
Fruit was hand harvested and vinified with minimal intervention before maturation in French oak. Jasper Hill's restrained winemaking philosophy allows the vineyard to remain the focus, producing a Shiraz of remarkable purity, structure and finesse rather than excessive extraction or oak influence. The result is a wine that has matured beautifully while maintaining freshness and precision.
