Overview
The 1994 Jasper Hill Georgia's Paddock Shiraz is a mature old-vintage Heathcote Shiraz from one of Victoria's most important pioneering estates. Georgia's Paddock is a benchmark Jasper Hill wine, shaped by low-yielding Shiraz, ancient Cambrian soils and a style known for concentration, spice, texture and long ageing potential.
The original block of Georgia's Paddock Shiraz was planted in 1975, with additional vines planted in 1987. Ten hectares of low-yielding Shiraz make this the largest production wine at Jasper Hill, while still reflecting the estate's distinctive intensity and sense of place.
Vintage & Winemaking
At release, the 1994 vintage showed a typical spicy and sweet red-berried bouquet, deep crimson colour and a mouthfilling palate with balanced acidity, extract and viscosity. The wine was noted for noble tannins and strong cellaring potential.
The fruit was fully destemmed, fermented with natural yeasts and kept on skins for five to six weeks before gentle pressing. It was then matured in French oak for 12 months.

Tasting Notes
Colour: Medium deep crimson, showing mature development.
Nose: Complex aromas of raspberry, blueberry, espresso, dark berries, paneforte, sous bois, mahogany, waxy leather, dried roses and herbs.
Palate: Rich, tactile and fully mature, with earthy sweet fruit, dried roses, herb garden notes, liquorice, satin tannins and mid-palate viscosity. The finish is grainy, firm and long.
Food Pairing
Pair with roast lamb, grilled beef, venison, slow-braised short ribs, mushroom dishes or aged hard cheeses.
Cellaring Potential
This is a mature old-vintage bottle. Best enjoyed now, with bottle condition, provenance and storage history especially important at this age.
