Overview

A rare mature vintage of Jasper Hill’s Emily’s Paddock, the estate’s smallest vineyard and one of its most structured, long-lived wines. The 1991 is predominantly Shiraz with approximately 5% Cabernet Franc, picked and fermented together. Naturally low yields, extended skin contact and firm tannins give Emily’s Paddock its characteristic intensity and longevity, with this vintage receiving 96 points from Jeremy Oliver.

Vineyard

Emily’s Paddock is Jasper Hill’s smallest vineyard at 2.7 hectares, situated on an easterly facing slope in Heathcote. Low yields contribute concentrated flavours, while the site is particularly known for producing wines with a firm tannin profile.

Vintage

At release, Jasper Hill described the 1991 as essentially a Shiraz wine with approximately 5% Cabernet Franc, with the varieties picked and fermented together. The wine was characterised as darker, bigger and more tannic than Georgia’s Paddock, showing earthy and chocolate characters, substantial tannin, excellent balance and exceptional cellaring potential.

Winemaking

Shiraz and Cabernet Franc were co-fermented with natural yeasts, remained on skins for five to six weeks and were gently pressed. The wine was matured for 12 months in French oak.
