Winemaking
Para is a single-vintage fortified wine matured in small oak barrels under warm cellar conditions. The warm environment encourages evaporation, with an estimated 3% lost each year to the “angels' share”, progressively concentrating the wine's flavour, aroma and viscosity during maturation.
