About This Whisky
A landmark release from Tasmania's Sullivans Cove Distillery, the Old & Rare 20 Year Old French Oak Single Cask TD0021 represents the distillery's first French oak whisky to reach two decades of maturation.
Matured for 20 years and 1 month in a 300-litre refill French oak ex-Tawny cask, this extraordinary Australian single malt whisky demonstrates the remarkable complexity and refinement achieved through patient ageing. Cask TD0021 was filled on 29 July 2005 and decanted on 8 September 2025, yielding just 444 bottles at 47.0% ABV.
Throughout its maturation, the cask was carefully monitored to preserve the balance between the distillery's distinctive spirit and the influence of French oak. During its final five years alone, it underwent 20 separate assessments by the distillery's tasting panel, ensuring that the whisky was bottled at its optimal expression.
Part of the prestigious Sullivans Cove Old & Rare collection, TD0021 offers exceptional depth, complexity and elegance, combining luscious fruit, rich confectionery, delicate florals and sophisticated herbal notes. As the distillery's oldest French oak release to date, it represents a significant milestone in Australian whisky craftsmanship.
Tasting Notes
Nose: Rich aromas of chocolate orange, rum balls, leather and Christmas spices mingle with maraschino cherries, Black Forest cake and blackberry jam. Notes of roasted pumpkin, sunflower seeds and orange cake are lifted by delicate honeyed florals and blossom.
Palate: Luxuriously creamy and full-bodied, opening with honey, macadamia nuts and maple bacon. Layers of caramel milkshake, caramel fudge and spiced orange cake develop alongside star anise, butter menthol and refreshing spearmint. The texture is syrupy, rounded and almost chewy.
Finish: A vibrant, medium-long finish revealing confectionery fruits, mixed nuts and mint chocolate, followed by delicate chamomile tea. Exotic notes of lychee, dragon fruit, pomegranate and cranberry emerge, leaving a lingering waxy texture and remarkable freshness.
