Filled on 22 September 2018 and decanted on 6 May 2026, Cask SC0814 yielded just 443 bottles at 50.0% ABV. The whisky demonstrates how the influence of a white wine cask can complement the richness of Sullivans Cove's spirit, combining vibrant fruit character with the structure and complexity of French oak.
The maturation required careful monitoring to achieve harmony between oak and spirit. The result is an expressive single cask whisky with remarkable depth, a creamy texture and a refreshing fruit-driven character. Layers of dark berries, tropical fruits, florals and indulgent confectionery reveal the unique influence of Chardonnay-seasoned French oak.
Tasting Notes
Nose: Rich and inviting aromas of blackberry syrup, strawberry jam, warm scones and fruit loaf. Layers of dates, plums, rose petals and cinnamon develop alongside chocolate mousse and crisp chocolate wafers. Subtle liquorice, anise, angelica and spiced fruit mince pie add depth and complexity.
Palate: Creamy, velvety and full-bodied, with flavours of rum and raisin, chocolate-coated pineapple, sweet chilli jam and rose water. Turkish delight, mandarin syrup, wattle seed and peaches and cream mingle with red grapes, sweet tobacco, oak char, dark caramel and butterscotch.
Finish: Juicy and generously long, featuring biscuit, chocolate muffin, date slice and treacle tart. Hazelnut, praline, mixed currants and gooseberries lead into tropical notes of dragon fruit and lychee, finishing with raspberry coulis and a lingering fruit sweetness.
