Tasting Notes:
This is a very stylish and classic expression of Yarra Valley Cabernet Sauvignon.Ā Intensely varietal, with fresh, bright redĀ berry fruit, cassis, subtle leafy and cedar hints,Ā the wine has aĀ complex yet well- balanced, flavoursomeĀ and elegant palate,Ā soft tanninsĀ andĀ lingering acidity and flavour.
Winemaking:
Fruit was hand-picked, then meticulously sorted to select only the best berries for fermentation in two, French oak, open fermenters.
Fruit was cooled and held for four days before fermentationĀ was allowed to commence, vesselsĀ were gently plunged twice daily during fermentation. The wine was on skinsĀ for aĀ total of 28Ā daysĀ āon skinsā before pressingĀ to French oak barriques for malolactic fermentation and maturation for approximately twelve months before blending and bottling.
The Vintage:Ā
2021 wasĀ aĀ ādreamāĀ Yarra Valley vintage, with almost ideal weather conditions throughout the entire season, leading to very healthy canopies and generous crops of beautiful fruit.
The season was generally mild and sunny, with very well-timed rain events for low disease pressure,Ā good soil moisture and minimal requirement for supplementary irrigation. The season was long, allowingĀ slow, steady and full ripening.Ā Cabernet Sauvignon was harvestedĀ up to two weeks later thanĀ is typical.
The 2021 Old Block wines are stunning, with a unique freshness and intensity of perfectly ripe aromas, flavours, palate weight, focus and tannin structure ā the best yet!Ā
