Overview
The 2019 Penfolds Bin 707 Cabernet Sauvignon 1.5L Magnum is a large-format release of one of Australia's most prestigious Cabernet Sauvignon wines. First vintaged in 1964, Bin 707 represents the Cabernet Sauvignon expression of the Penfolds house style: intensely flavoured fruit, multi-region sourcing, full fermentation completion and maturation in new oak.
Sourced from McLaren Vale, Coonawarra, Barossa Valley and Padthaway, the 2019 Bin 707 is built for power, structure and long-term cellaring. Presented in magnum format, it offers strong collector appeal and slower ageing potential.
Vintage & Winemaking
The 2019 South Australian growing season was marked by smaller yields and hot summer conditions, with Cabernet Sauvignon showing excellent colour, firm tannin profiles and intense flavour. Fruit was sourced across McLaren Vale, Coonawarra, Barossa Valley and Padthaway, reflecting Penfolds' multi-vineyard, multi-region blending philosophy.
The wine was matured for 18 months in American oak hogsheads, 100% new, building richness, structure and the classic Bin 707 profile.

Tasting Notes
Dense red with a dark core. Aromas of black olive, cigar leaf, violet, lavender, sea spray, iodine, roasted meats, cinnamon and mustard seed lead into a powerful palate shaped by regional Cabernet structure. McLaren Vale brings plushness, Coonawarra adds red-earth character, while Barossa provides core depth and drive.
Food Pairing
Pair with meat pastilla, Nebraska grain-fed ribeye, Dexter T-bone, roast beef, venison or Gouda.
Cellaring Potential
Drinking window: 2025-2050. The magnum format should support slower evolution and strong long-term cellaring potential.
