The Terroir: This Pinot Gris comes from three small plots located in the heart of Hengst.
This Grand Cru, exposed South-South East, reaches an altitude of 360 meters and is situated in the commune of Wintzenheim. The total area is 53 hectares. The soil of Hengst is composed of brown calcareous soils, gravelly and clayey with Oligocene conglomerates. This stony soil comes from the Muschelkalk limestone interspersed with clay. It is a fertile wine-growing soil that warms up quickly in the spring. The vine is favoured by the stony structure and has a water reserve thanks to the conglomerates.
Soil work: Weeding every other row. Light tillage.
The name: The name "Hengst" means the height.
Vinification and upbringing: The harvest is 100% manual. The approach remains traditional. The grapes are pressed whole for about 7 hours in our pneumatic presses. The settling is natural. The fermentation starts spontaneously with the yeasts from the environment in a centenary vat. It is followed by an upbringing on fine lees for several months until the bottling which usually takes place in July. Before bottling, the wine is filtered. It can be adjusted in dryness if necessary at this point.
Comments: This Pinot Gris of great nobility is characterized by its density and its elegance. The complex nose opens with notes of honey, fresh nuts, and acacia flowers. It often evolves more towards notes of truffles. In the mouth, the wine is smooth and balanced, thanks to a pure and fresh acidity. It deploys with finesse and nobility on exotic fruits, the silkiness supported by grilled notes, sometimes torrefied by the smell of roasted nuts. The finish is long and saline, full of a delicate minerality.
Food pairings - wines: This wine will be the privileged companion of shellfish (lobster - langoustine) in sauce, but also of traditional fatty foie in terrine. Sweet-salty cuisines from around the world will be served well. Evolving dishes of game birds or creamy dishes with truffle juices will be elegant.
