Tasting Notes
Nose: The aroma presents an intriguing mix of yellow plum, soy sauce, and yellow apple, adding a unique complexity to the bouquet.

The Terroir:Ā This Riesling comes from three plots located close to each other, in the heart of Hengst. This Grand Cru, facing south-southeast, culminates at 360 meters and is located in the commune of Wintzenheim. The total surface area is 53 hectares. The Hengst terroir is made up of brown limestone, sandstone and clay soils associated with Oligocene conglomerates. This stony soil comes from the Muschelskalk limestone intermixed with clay. It is a powerful wine-producing land, which warms up quickly in spring, rooting is favored by the stony structure and it has a water reserve thanks to the conglomerates.

The name:Ā The name āHengstā means Stallion.
Vinification and aging:
The harvest is 100% manual.
The approach remains traditional. The grapes are pressed whole for approximately 7 hours in our pneumatic presses. Settling is natural. Fermentation begins spontaneously with the yeasts in a century-old tuns. This is followed by aging on fine lees for several months, until bottling, which usually takes place in July.
Before bottling, the wine is filtered. It can be readjusted with sulfur, if necessary, at that time.

This great dry, dense, powerful and mineral white wine is a model in terms of evolution. In warm years, we find an expressive and open nose where candied citrus, pink grapefruit, and spice combine with a luminous minerality. The lively and ample palate is carried by a chiseled and crystalline acidity, supported by flavors of fresh citrus and infused plants.
Cooler vintages can sometimes be reserved or a little austere, but the delicate and often ethereal structure opens up in 5 to 7 years and improves with age. The minerality is then linked to the flower, with scents of verbena and limestone rock.
Food and wine pairingsĀ :
This wine will be the perfect partner for fine fish and shellfish (lobster, crayfish). With age, creamy poultry dishes or those with full-bodied juices will flourish thanks to its dense minerality. After 20 years, a pot-au-feu with bone marrow will sharpen its saline texture and its long, precise acidity.
