About This Wine

Handcrafted using Chardonnay from cool, high altitude Adelaide Hills vineyard sites. The wine is made using the Méthode Traditionnelle and fermented, bottled and disgorged by hand on-site at Deviation Road’s Longwood winery.

Fruit was sourced from Carry Gully (40%) and Aldgate (60%). In 2018, 90% of the wine underwent malolactic fermentation. A portion completed malolactic fermentation in third- and fourth-use French oak before blending back with stainless steel–fermented components.

The wine was aged for a minimum of seven years on lees following secondary bottle fermentation before release.

Tasting Notes

Added complex characters of spiced lemon biscuit and shortbread, with notes of white florals and seaspray. The palate is long with a crisp, mouth-watering finish, supported by a persistent fine bead and zesty sherbet acidity.
