About This Wine
Les Combottes is a lieu-dit south of the village of Gevrey-Chambertin, halfway up the hill just below the steep incline of Les Monts Luisants, in a steeply sloping area of 5–6 percent. The plot ranges in altitude from 271 to 282 meters and faces due east. Our grapes are vinified with little or no destemming, using only indigenous yeasts. Fermentation lasts about two weeks with light punching down at the start, then pumping over towards the end of fermentation. After being lightly pressed in a pneumatic press, the wines are transferred to the cellar by gravity. The wines spend 14 to 18 months in oak barrels.
About the Winery
Domaine Dujac is a highly regarded and critically lauded wine producer based in Burgundy’s Morey-Saint-Denis appellation. It makes wines from Pinot Noir and Chardonnay ranging from Bourgogne to grand cru vineyards in the Côte de Nuits, including Clos de la Roche and Le Chambertin. The domaine was founded in 1968 by Jacques Seysses, who purchased a small property in Morey-Saint-Denis and planted Pinot Noir and Chardonnay. Over time the estate has expanded with additional grand cru and premier cru holdings and now also runs a négoce firm, Dujac Fils & Père. Jeremy Seysses gradually took over from his father after joining the domaine in 1998 and is now joined by his wife Diana and brother Alec. The wines are never filtered and are very rarely fined.
