About This Wine
Vineyard Notes
The Bonnes Mares Grand Cru lies between Morey-Saint-Denis and Chambolle-Musigny on a steep, east-facing slope. The 1.4-acre plot ranges in altitude from 278 to 296 meters. The soil composition varies significantly across the vineyard: the eastern section features reddish-brown soil rich in limestone fragments (calcaire à Entroques), while the western side is characterized by lighter, less stony soil containing marls and small oyster shells.
Winemaking and Ageing
Grapes are vinified using only indigenous yeasts to preserve the authentic origin of the wines. While traditional whole-bunch pressing is favored, a small amount of destemming may be employed depending on the vintage's ripeness. Fermentation lasts approximately two weeks with light punching down and pumping over to ensure a balance between firmness and suppleness. The wines are matured for 14 to 18 months in oak barrels, using a significant proportion of new wood to refine the tannins. The wines are never filtered and very rarely fined.
About the Winery
Domaine Dujac is a highly regarded and critically lauded producer based in Burgundy's Morey-Saint-Denis appellation. Founded in 1968 by Jacques Seysses, who learned the craft from icons at Domaine de la Romanée-Conti and Domaine Armand Rousseau, the estate produces high-quality wines ranging from entry-level Bourgogne to Grand Crus. Now managed by the second generation, including Jeremy Seysses, the winery maintains a non-interventionist philosophy.
