Fruit was harvested over several days in early April.\u003c\/p\u003e\n\u003ch3\u003eWinemaking\u003c\/h3\u003e\n\u003cp\u003eThe grapes were gently whole-bunch pressed to tank before the juice was cold settled and racked clean to stainless steel. Fermentation took place at cool temperatures with aromatic yeast and continued until dry. The individual components were then matured on lees for four months before final blending in tank.
