The acidity is assertive and tight here, reflecting the cool vintage and working with chalky phenolics to create a coiled and taut frame through the finish. The grapes from 30-plus-year-old vines ripened in still, cool, sunny autumn conditions and were harvested on March 15, two weeks ahead of average.\u003c\/p\u003e\n\n\u003cp\u003eHand-harvested fruit was chilled to 2°C, whole-bunch pressed and gravitated to French oak barriques (one third new) for fermentation. Fermentation lasted two months in cool autumn conditions.
