Produced with a simple, low-intervention approach and wild yeast fermentation, the 2024 combines fine bubbles, bright natural acidity and a softly textured palate shaped by ageing on lees.\u003c\/p\u003e\n\n\u003ch3\u003eVineyard\u003c\/h3\u003e\n\u003cp\u003eThe fruit comes from Melville’s Vineyard on the eastern side of the historic Rutherglen wine region. The Fiano vines were planted in 1997 on red clay loam at approximately 180 metres elevation, with east-west row orientation. The warmer Rutherglen climate is particularly well suited to Mediterranean varieties, while Fiano naturally retains the acidity required for a fresh sparkling style.\u003c\/p\u003e\n\n\u003ch3\u003eWinemaking\u003c\/h3\u003e\n\u003cp\u003eThe fruit was machine harvested in the cool of the night and pressed immediately on arrival at the winery. Only the clear free-run juice was used, with extraction limited to approximately 450 litres per tonne. The juice was chilled to 3°C for settling, racked off solids and then allowed to warm until natural wild yeast fermentation commenced. Once fermentation was active, the wine was cooled to 13°C for a slow, steady fermentation designed to build aromatic complexity and finesse.\u003c\/p\u003e\n\n\u003cp\u003eThe wine was bottled as a Petillant Naturel and remains undisgorged, retaining its lees in bottle.
