To qualify for the Romulus blend, vineyards must be over 50 years old, with this release sourced from 80+ year old Shiraz vines in Nuriootpa, 80+ year old vines in Light Pass and 60+ year old vines in Light Pass.\u003c\/p\u003e\n\u003cp\u003eThe fruit was hand harvested, destemmed and crushed into small 1.5 tonne open-top fermenters. It was chilled for five days before naturally warming to begin fermentation. After approximately 20 days on skins, the ferments were pressed to a combination of new and seasoned French oak hogsheads, with 45% new oak.
