To qualify for the Remus blend, vineyards must be over 50 years old, with this release sourced from 80+ year old vines in Central Eden Valley, 60+ year old vines in Moculta and 80+ year old vines in Flaxmans Valley.\u003c\/p\u003e\n\u003cp\u003eThe fruit was hand harvested, destemmed and crushed into small 1.5 tonne open-top fermenters. Selected fermenters included up to 15% whole-bunch clusters, followed by a pre-fermentation cold soak and daily hand plunging for gentle extraction.
