The name recalls the beehives once found in this sun-drenched clos, where bees were known locally as “mouches à miel”, or honey flies.\u003c\/p\u003e\n\n\u003cp\u003eThe vineyard is planted equally to Chardonnay and Pinot Noir. Drouhin's Chardonnay parcel covers 6.82 hectares, with vines averaging 45 years of age. The grapes reached perfect maturity, producing highly aromatic wines with yellow-fruit and floral notes. The grapes are harvested by hand in open-work crates and carefully sorted when necessary. Whole bunches undergo slow pneumatic pressing, with the final press juice separated from the free-run juice.
